Besan ke spice Gatte ki sabzi is a very traditional dish of Rajasthani cuisine of India. In these days besan ke gaate is very popular in all over the world . You can serve it any occasions and formal party also.
Besan ke gatte ki sabzi is very easy to cook and it is very yammi. Maintained it with onion and garlic gravy .We can serve it as a snakes (dry gatts) and use it with tea and lunch also.A large part of Rajasthan is a desert and a very less amount of vegetables grow there and hence the dishes need very few types of vegetables.
Ingredients for gatta :-
1/2 cup Yogurt (Dahi).
1/2 tsp turmeric powder (Haldi)
1/2 tsp red chilli powder (lal mirch)
1/2 tsp garam masala
1 tsp carom seeds (ajwain)
pinch of Antofagasta
Ingredients of Gravy :-
1 cup Onion paste
1/2 cup Tomato puree
1/2 tbsp ginger(cruised)
1/2 tbsp garlic (cruised)
1 tbsp coriander(dhaniya) powder
1 tsp mustered seeds
1 tsp garam masala
2 tbsp Oil
1/2 cup curd
1 tsp red chilli
pinch of asafoetida
salt as per taste.
Method :-
Now take bowl and add all ingredients in besan .(not curd )
Now mix it well.
Now add curd slowly(not mix all curd in one time)
Make it into a firm dough.
Wait for 10 min .
Now take small part of dough and roll it into cylindrical shape (1/2 inch thickness)
Now take a big pan and boil water . Take enough water and add few drop of oil .
Now add the gattas in boiled water they should be fully merged in water.Wait for 10-12 min.
Now check by inserting knife in the gatta and make sure knife come out clean .
Now drain the gattas out of water .
Don't through water . It will use in gravy
Now cut gattas (How big you would like )
Gattas are ready .
For gravy
Take a pan .add 2 tbsp oil .
Add mustered seeds chilli ,garlic , asafoetida for a sec
Now add onion paste
cook for 5-6 min at medium flame .Now add all masala and cook for few min .
Now oil or masala are separated.
Now add tomato puree. and mix it cook for 6-8 min.
Now add curd .mix it again . for 5-6 min.
Now add all drained gattas . cook for 4-5 min . at low flame.
Now add water.
Now cook for 15- 20 min.at medium flame .
Now gravy has thick .
Now gatte ki sabzi is ready to eat to eat !!!!!!!!!!!!!!!!!
