Banarsi Longlatta
Long latta is a very famous sweet in eastern UP, Bihar, Bangal. People use to have it during evening time and special occasion . This sweet is basically very much similar to sweet syrup deeped guzia specially popular in delhi and other part of north India. The best part of this sweet is - It is very easily available in evening time at most of the roadside sweet shops and that is even at very cheap price. It is stomach-filling sweet which contains mawa inside. Dipped in syrup adds a very attractive taste to it . I am posting this recipe so please try it .
Ingredients for dough :-
2 cups all purpose flour
1/2 cup Ghee
water to mix.
Garnishing Ingredients :-
250 gm sugar
2 cup water
Stuffing Ingredients :-
1 cup Khoya (hard milk)
1 tbsp cashew nuts
1 cup sugar powder.
1 tsp cardamon powder.
1 tbsp finely chopped almonds
1 tbsp raisins
1 tbsp coconut powder
1 tbsp Charoli
250 gm Ghee or refined oil.
6 clove

Method for dough :-
Add 1/2 cup ghee into all purpose flour.
Mix it .knead into a still dough with water.

Leave to rest for at least 30 min .

Saute the Khoya over low flame.
Now it has slightly fried Take off the heat leave it for cool .
Now mix all ingredients . Mix it well.
Filling is ready !!
The dough divide into 5 equal parts. take part and roll it like puri as shown in pic.
Put the 2-3 tbsp stuffing on it .
Now fold it from one side. it press it .
Now fold from other side. Make sure the edges are completely sealed ... otherwise they will be open and filling will come out while frying .
Now fold it like semi circle with your hands.
Now joint both corner
Take a pan and heat ghee over low flame for deep frying
Carefully slide 5-6 pieces in oil. turn them over and deep frying them over low flame until they turn Dark Browne.
It has golden brown so take them out . Longlatta is ready for garnishing !!
Take a heated pan and add sugar and water and cook for for 10-15 min at the medium flame.
syrup should be one thread.
