Mawa Gujiya

  Khoya ki Gujiya
 
Gujiya is a very popular dish in north Indian . It is a sweet  dish  which has a crispy flaky pastry with a soft filling of hard milk (mawa)and dry fruits .This mawa Gujia i learnt it from my Mother  .I  was seeing from my childhood. My Maa is use to make mawa gujiya on Holi and Diwali specially when me and  my brother came to home from the  Hostel .
Now i tried it and it made perfectly. The filling varies and the names of gujiya varies accordingly. The outer cover is flaky and crispy complimenting the softer filling. Here's a delicious sweet dish recipe that can be enjoyed at Holi time and can be stored for a longer time. Learn how to make mawa gujiya.Mawa is a hard milk .We can made it at home easily . I have already post the recipe of Mawa (Khoya).It is not tough recipe but you need seal it properly.Otherwise it will be open when it will fry   .The only fear which i had to made the  Gujia's that Gujiya should not split, that's why i did the sealing of gujiya very carefully ,and i did it very well. i fried them perfectly without split a single gujiya. Fry it on law flame stir it .  It will give nice equally color .



Ingredients dough  :-                                                    
cups all purpose flour
1/2 cup Ghee
water to mix.

Filling Ingredients :-                                                                 1 cup Khoya (hard milk)
1 tbsp cashew nuts
1 cup sugar powder.
1 tsp cardamon powder.
1 tbsp finely chopped almonds
1 tbsp raisins
1 tbsp coconut powder
1 tbsp Charoli
250 gm Ghee or refined oil.
Method :-



Add 1/2 cup ghee into all purpose flour.
Now rub it .knead into a soft dough with water.
Leave to rest for at least 30 min .
Dough should be soft.




Saute the Khoya over low flame.
Now it has slightly fried  Take off the heat leave it for cool .
Now mix all ingredients . Mix it well.
Filling is ready !!

The dough divide into 10 equal parts





Take 1 part and roll it like puri as shown in pic.(20cm length, 1 cm thickness)






Take a Gujjiya cutter.Now put the puri on it .
Put the 2 tbsp stuffing on it .
Fold the other half over and the edges together to seal.



Either you can cut off the edges with the fancy cutter.
Otherwise you can make a design with your hands . Pinching and twisting all along the sealed edges.All Gujiyas are now ready for fry .








Now its time for deep fry.Take a pan and heat ghee over low flame for deep frying
Carefully slide 5-6 pieces  in oil. turn them over and deep frying them over low flame until they turn light Browne.




Now its ready to eat !!!!!!!!!!!!!!!!!!!!!!
