Dry stuffed samosa


                                           

Dry samosa is crispy and tasty . We can store it for long time . Serves it like a snack with tea or coffee .  Preparation and ingredients are very similar to dry kachori and tastes equally similar.
  it can also be served with sweet and sour tamarind chutney or dates chutney (khajoor chutney).
Dry Samosa is a spicy and crispy triangles stuffed with dry mixture of crushed gathiya, spices and dry fruits. It is a perfect light and tasty snack that can satisfy your urge for something spicy and stomach filling whenever you are hungry.They are typically prepared at home during festivals like diwali , Holi Janmasthami .The only fear which i had to made the  samosa that samosa should not split, that's why i did the sealing of samosa very carefully ,and i did it very well. i fried them perfectly without split a single samosa. This recipe uses cruised gathiya powder as base ingredient for flavorful stuffing, however, you can also prepare it with besan (gram flour), Cruised roasted papad , Ratlami sev .

Outer layer ingredients :-
2 cup All purpose flour (mainda)
2 tbsp oil
1 tsp carom seeds (ajwain)
Ingredients for stuffing 
250 gm      Oil for deep frying
1 cup          cruised sev or gattiya or Ratlami sev
1 tbsp          Fennel seeds
2 tbsp          cruised dry coconut
3 tbsp          sugar powder
1/2 tbsp       dry mango powder
1/2 tbsp       Garam masala
1 tbsp          red chilli powder
1/4 tbsp       Turmeric powder
4 tbsp          Roughly chopped cashew nuts
3 tbsp          Roughly chopped Almonds
2 tbsp          Raisin
Method  :-




Take a large bowl . Mix all purpose flour,salt,carom seeds and oil now rube it well .Now knead a semi dough with the help of lukewarm water . Dough should be soft.




 Apply some  oil on the surface of it leave it for 10-15 min.








Method for stuffing  :-



Take a small pan and heat it with 2 tbsp oil for roasting all stuffing ingredients.Put the fennel seeds for 15 sec
Now you can add cashew nuts and almonds and roughly chopped coriander and saute it





Now put salt red chilli powder,turmeric powder, Dry mango powder. Mix it  and saute them for1-2 min





Now add cruised ratlami sev or gattiya .mix it cook for 2-3 min

Now stuffing is ready for samosa Keep a side for cooking.


Now it time to make samosa . Divide dough  into 20 equal parts and give them a shape of ball .





Take 1 part of it and roll it as shown as pic.
Divide into 2 parts


Fold it like a Cone  as shown as the picture
put 2 tsp stuffing mixture in cone
lightly wet open edge of cone with water and press it to seal properly

Seal it properly otherwise it will open .The only fear which i had to made the  samosa that samosa should not split, that's why i did the sealing of samosa very carefully.


Now all 20 pecies are ready.








Take a pen and heat oil over low flame for deep frying
Carefully slide 8-9 pieces  in oil and deep frying them over low flame until they turn light Browne.Fry it on law flame stir it .  It will give nice equally color .




Serve it with any chutney or sauce
Crispy and spicy dry samosa is ready for eat!!!!!!!!!!!!!!!!!!!!!!!!
