Dahi Vada



Dahi wada is very popular in north india. It is also  known as Dahi Bhalla in Punjabi . Thayir Vadai in Tamil. Malayalam,Perugu Vada in Telugu, Mosaru Vade in Kannada, Dahi Bara in Oriya and Doi Bora in Bengali.

The hot deep fried vadas are first put in water and then transferred to thick beaten yogurt. For best results, the vadas are soaked for at least a couple of hours before serving. To add more flavor, they may be topped with coriander or mint leaves, chili powder, crushed black pepper, chaat masala, cumin, green chilis or boondi. Sweeter curd is preferred in some places in India, especially in Maharashtra and Gujarat, although the garnishing remains the same.A combination of coriander and tamarind chutneys are often used as garnishments in addition to those mentioned above.Sambhar vadas and Rasam vadas are also popular snacks in south India.It is  great dish for a formal dinner , festival  and party.
You can also make the dahi vadas in advance and freeze them before soaking in the water. When ready to use, take as many as needed out and soak in hot water for a few minutes. After 30 min you can  soak in warm water for 30 min Now you can prepare and serve them with Curd and chutney.

 Ingredients :-
2 cup udadh dal (split black lentils )
1 cup Moong dal (split yellow gram )
Oil for frying
4 cup Curd(dahi)
Black salt
Salt to taste
Cumin powder (roasted)
Red chilli
Method :-


Mix both dal and soak it over night.Now drain it.





Make fine paste with mixer.
Now finely beat it.





How to test if batter is ready?:  Take a bowl half full of water and put a drop of paste in it.If it comes up, paste is ready for deep frying .If it not, beat it again. This is shown in below picture:





Take pan with heavy bottom.Put the oil and heat it at medium flame.Now take some paste in your hand and drop in heated oil gently .as shown in pic (at low fame) .




Now turn it carefully and


Fry till it comes golden brown:




Take big bowl of  warm water and add 1 tsp salt.
Now put all the fried vadas in it for 20 to 30 minutes:




Just before serving, drain and squeeze out the excess water and put all vadas in whisked curd . you can add sugar in curd .





Garnish with the chilli powder, cumin seeds powder and salt and serve with  imli ki chutney.Now Dahi-Vada is ready to eat!!!!!!!!!!!!!!!!!!!!!!!1
